Is cake passé?
I can’t help it. I have to say “cookie” in the weird kind of pseudo wookie manner of the Cookie Monster. Oh and P.S., a healthy Cookie Monster? What’s that all about? That HAS to be a harbinger of doom or a horseman of the apocalypse or something. Anyway.
S.O. had a birthday and she wanted an unusual celebratory dessert — something featuring lemon that was less like birthday cake but still special-feeling. Knowing S.O.’s love for the ice cream sandwich, I thought, hey, I can make those. Bonus: They were super easy and impressed our fellow celebrationists. Celebrationers? Celebrities?
Here’s how to make your own cookie-based ice cream sandwiches. Go nuts with your own flavors if you don’t like lemon and strawberry.
Lemon Cookies (courtesy of S.O.’s grandma)

1 pkg lemon cake mix
2 eggs
1/2 c oil
1 t grated lemon peel
Preheat oven to 350. Mix all the ingredients together. Drop by spoonfuls onto ungreased cookie sheet. Bake 10-12 minutes.
Let the cookies cool. Put them in the fridge or freezer until you’re ready to assemble the sandwiches. The cold cookies will slow the melting of the ice cream once you start building them.
Be warned, these cookies are crazy addictive in their native, unembellished state. Just writing this is making me crave them.
Ice cream:
I’m a big fan of homemade ice cream but store-bought worked great for these. Just let it warm up on the counter until it’s spreadable. Drop a couple of big honking spoonfuls of ice cream on one cookie, smash another one on top of it. Repeat. Put the whole batch back in the freezer for a few minutes to set.
This batch of cookies and a gallon of Breyer’s strawberry will make about 15 good-sized ice cream sandwiches. Throw them on a plate and serve ‘em up. Yummy noises may follow. Wookie voice optional.


Just so you know, my 5 year old daughter tells me that:
1. Cookie Monster only eats food he likes.
2. Cookie Monster only likes to eat cookies and the letters of the alphabet.
So, maybe the letters are actually good for you?
(Cookies are maybe the only food I can never pass up.)
